With plump, oversized fish sculptures floating above the dining room, a black octopus stretching its tentacles across a cherry-red wall and fish shadows dancing in small colorful spotlights on the floor, Resorts World Las Vegas’ Kusa Nori seems like a dimly lit hot spot for seafood. And it is — a sushi bar sits next to the octopus wall that prepares fresh sashimi, nigiri and specialty rolls, while the kitchen turns out dishes like eel with kabayaki sauce, sesame seeds and negi, as well as misoyaki black cod.
But Kusa Nori does much more. The modern Japanese restaurant near Conrad Las Vegas also cooks up yakitori, teppanyaki and robata meats. No matter what the protein is, Kusa Nori’s chefs ensure every dish has flavor and flair in its presentation. Take the shigoku oysters — they are topped with a shiso-sakura-shoyu mignonette, a dot of kusa cocktail sauce, pearls of golden ikura and edible gold flakes and arrive on ice in a shroud of smoke.
